Recipe for my fav Kale Salad

One of my most asked about and easiest recipes is this Fittabulous Kale Salad! Not only can you eat it once, but you can prep and eat it all week long! Isnpired from the True Food Kitchen Tuscan Kale, its so simple and so good! Just add your own protein or toppings of choice to take it up a notch and make it even better! #kaleyeah

4-6 cups kale, loosely packed, midribs removed

juice of 1 lemon

3-4 tablespoons extra-virgin olive oil

2 cloves garlic

salt & pepper, to taste

hot red pepper flakes, to taste

2/3 cup grated Asiago or Parmesan cheese (I now swap for nutritional yeast)

1/2 cup freshly made bread crumbs from lightly toasted bread (for the True Food Kitchen version, I don’t use for mine)


Whisk together ingredients.

Pour over kale in serving bowl and toss well. Keep refrigerated!

Add 2/3 of the cheese and toss again.

Let kale sit for at least 5 minutes. Add bread crumbs, toss again, and top with remaining cheese.

Make it pretty or eat out of a Tupperware container like i did - either way its SO good!
